Thanksgiving Leftovers Casserole!

I received complimentary products from Pacific Foods. They did not ask me to write a post, nor is this post sponsored. My (positive) opinion is my own.

Every now and then Pacific Foods sends me a variety of products to sample, and I honestly have had the Organic Vegan Mushroom Gravy they sent me in my pantry for almost a year now! But what better occasion to use gravy than right after Thanksgiving, when leftovers are abound? My mom sent me home with plenty, plus a bag of fresh Brussels sprouts. When I got back to Boston on Sunday, I could hardly wait to get this casserole prepped!

Once my casserole was in its pan I just put it in the fridge, and the next night I put it in the oven and I was ready to chow! Plus I ended up with leftovers…of these leftovers. Does that qualify as inception?

All the Catalunya at Barcelona

Barcelona West Hartford had an Argentina wine dinner in March and a Foods of Galicia dinner in April. May’s dinner was all about the food of Catalunya – with wine pairings! This was my weeknight out last week and it was great fun!

I attended the dinner with my good friend Kat and her sister Helen. My sister was supposed to come too but alas, she had to work. It was my first time meeting Helen and she is the woman – I can’t get over how similar her dynamic with Kat is to my dynamic with Hannah!

A Couple of Meals

Totally forgot to share my race shirt in yesterday’s Santa’s Run recap – oops! I wore it to work on Monday to continue my own little celebration of my time.

Eats have been pretty good this week. Last night’s meal of leftovers was quite blah, but Monday’s dinner of leftovers was actually quite amazing. I put together a hodge-podge bowl of shrimp, sauteed peppers and onions, chili, broccoli, coleslaw, and refried black bean dip. Yes, that all fit in one bowl and it was so so SO good.

Wednesday night my mom went all out and prepared a dish she hadn’t had the time to make in awhile – healthified breaded chicken. She didn’t fry it, and used whole wheat flour for the breading. We also had the love of my life, roasted Brussels sprouts. I had two HUGE helpings and had to stop myself from finishing off the rest so that I could have some to use in my salad the next day.

Also had a little baked potato with the last of my Mariah’s Chow Chow Relish – oh no! Gotta restock.

Today I’ll be doing either Group Power or Group Step – not sure which yet, it depends on what time I can get outta this office! I have a holiday party to attend tonight where food and wine will be a-plenty. Don’t worry, pics will be taken – in between trips to the dance floor!

New Camera’s Premier!

On Black Friday (a week ago today – oh yeah, it’s Friday, hell yeah!) I got a new camera at Best Buy!

I haven’t had a chance to share any photos that I’ve taken on it – until today! This post will be a combination of show and tell for both the new camera, and food I’ve eaten in the past week.

Black Friday dinner

Turkey burger and fries with spicy yellow mustard, leftover green beans and zesty horseradish carrots. Usually my favorite part of this meal would be the fries, but the carrots left over from Thanksgiving were a  real treat. Horseradish + breadcrumbs + carrots = <3

Typical Daybreak cafe au lait

I don’t remember what flavor this particular nonfat cafe au lait was, but it doesn’t really matter because Daybreak coffee is amazing no matter what the flavor.

Saturday's dinner

I had a whole wheat spaghetti bowl for dinner that night with marinara, ground turkey and broccoli. I had seconds of all but the pasta – pasta is kinda a take it or leave it thing for me.

I present to you: the best Thanksgiving leftovers creation of all time.

The above caption may be a bold statement, but I’m sticking to it. My mom made a leftover turkey casserole, which I had on top of a bed of leftover broccoli. And then I had seconds. And maybe thirds were involved…

Wednesday's dinner: leftovers are still king.

I got a nice healthy dose of carcinogens in the above meal. On Tuesday my mom cooked, but I was out (more on that later), so these leftovers were new to me. Crispy, Southern-style cornbread heated under the broiler for maximum crusty-ness, and chicken chickpea chili and pico de gallo served over the last of the leftover broccoli.

Man, I sure have gotten my broc on plenty in the last week, huh?

I got more and more excited about the new camera as I inserted these photos into this post – I hope you guys have enjoyed too!
